Pan-Seared Sea Bass with Lemon Butter Sauce

Sea bass is elegant fish with delicate flavor and ability to develop perfectly crispy skin.

Ingredients

  • 4 sea bass fillets, skin-on
  • 100g cold butter
  • Juice of 2 lemons
  • 2 tbsp white wine
  • Capers, asparagus

Method

Pat fish dry, score skin. Season and sear skin-down 3-4 minutes. Flip briefly. For sauce: reduce wine and lemon, whisk in cold butter. Add capers.
