Ingredients
- 4 sea bass fillets, skin-on
- 100g cold butter
- Juice of 2 lemons
- 2 tbsp white wine
- Capers, asparagus
Method
Pat fish dry, score skin. Season and sear skin-down 3-4 minutes. Flip briefly. For sauce: reduce wine and lemon, whisk in cold butter. Add capers.
