Ingredients
- 8 lamb rib chops (100g each)
- Mint pesto: mint, pine nuts, Parmesan
- 800g baby potatoes
- Fresh rosemary
Method
Make mint pesto with toasted pine nuts. Roast potatoes with rosemary at 200°C. Sear lamb chops 3-4 minutes per side. Drizzle with pesto.
