Lamb Chops with Mint Pesto and Roasted Potatoes

Lamb chops are restaurant favorite—quick to cook, elegant to present, absolutely delicious.

Ingredients

  • 8 lamb rib chops (100g each)
  • Mint pesto: mint, pine nuts, Parmesan
  • 800g baby potatoes
  • Fresh rosemary

Method

Make mint pesto with toasted pine nuts. Roast potatoes with rosemary at 200°C. Sear lamb chops 3-4 minutes per side. Drizzle with pesto.
